I shall endeavour to keep the links updated and apologise for any I miss (keep in mind the average life-span of a website is 2 days). An excellent and thorough introduction to map design from Colorado University.
Golledge, Reginald G. (1999) Wayfinding Behavior: Cognitive Mapping and Other Spatial Processes.
Essentially a long book review this article nonetheless offers some interesting information on different approaches to researching wayfinding behaviour in humans and animals.
Cognitive Maps for Mobile Robots – An Object based Approach
A Phd thesis focused on what the title suggests. Not too technical and shows that truly interactive robotics is still a little way off.

A gallery of digital maps and applications. A great example of the diversity omap applicaion including maps of the net, fairy gardens and 3d biological structures. Mappa.Mundi examines information discovery on the Internet via an eclectic mix of ideas about technology, history, and the future of cyberspace.
Walrus - Mappa.Mundi Magazine - Map of the Month
A particularly interesting entry in the above gallery. An innovative new software WALRUS creates impressive 3d 'maps' of information that someone suggested looked akin to radioactive jellyfish.

An essay critiquing some of cartographies pre-eminent critics by Saul Albert a London based artist and theorist associated with the collective Twenteenth Century.

A reasonably lengthy Essay by Simon Ungar from the Uni of Surrey looking at how congenitally bling people cognitively map space. Ungar presents past, present and future areas of research.
The Fine Art of GIS Cartography
David J. Endelman presents his thoughts on the possibilities of GIS as an artistic medium. A little dated (1999) yet interesting if you compare it with current GIS inspired artists (look at the Information Systems section of the digital artist directory on Conceptual Design/Info Arts Links).

CloudSat - Home
Colorado State University's Home Page for the NASA funded Cloudsat satellite. The purpose of the mission to provide detailed 3d data about clouds and precipitation allowing scientists to more accurately map and predict wheather and global warming. Includes the cloudscape paintings of the projects scientific director, Graeme Stephens.

The aim of this ongoing project is to map the entire shore of the Danube River via an innovative photographic technique. Viewers can choose parts of the Danube to view the scrolling uninterrupted images.
